The Aras Cask Whiskey
Hyde whiskey honors Ireland’s first president, Douglas Hyde, and the establishment of the Irish Free State. Handcrafted in small, limited edition batches and non-chill filtered for an authentic character, HYDE Single Grain Irish Whiskey is made from pure corn and barley on a traditional ‘Coffey Still.’ Triple distilled and matured for over 6 years in flame- charred, first-fill ex-bourbon casks from Kentucky, it is a pure, unblended Irish whiskey.
TASTING NOTES:
NOSE: Cinnamon and clove with sweet caramel flavors, offering a complex and spicy aroma with American bourbon notes.
PALATE: Robust single-grain spices with a hint of cracked black pepper, followed by buttery vanilla and charred oak.
FINISH: Long and satisfying, ending with a silky blend of oak and barley.
A Premium Irish Whiskey
Hyde No. 5 is a triple-distilled, pure grain Irish whiskey, crafted in small batches. Distilled in a traditional copper column still from pure corn (maize) grain, it is matured in US ex-bourbon casks for 6 years, then finished for 9 months in French ex-Burgundy
red wine oak casks. This process imparts a rich ruby-red color and complex flavor to Hyde No. 5 Single Grain whiskey.
TASTING NOTES:
NOSE: Spiced with red berry fruit, vanilla, and toasted oak.
PALATE: Creamy with notes of sweet custard, apple peel, red berries, and orange
blossom honey.
FINISH: Long and satisfying with plum, jam, spice, and a silky blend of oak and barley.
President's Reserve Special Reserve
18YO Single Malt & 8YO Single Grain Irish Whiskey with a Sherry Cask Finish Hyde No.6 is created using 18 Year Old Single Malt and 8 Year Old Single Grain Irish whiskey
which were both originally aged in flame charred American Bourbon barrels. These two carefully chosen vintages are then married together for a further 9 months of ‘finishing’ in Spanish, Vintage, toasted, Oloroso sherry cask Butts, which is why we call it’ Double Wood’. Each Oloroso Sherry butt is 491 Litres/108 gallons in size.
TASTING NOTES:
NOSE: Delightfully floral notes of vanilla, sweet, honey, caramel, chocolate, and mixed fruit,infused with spices.
TASTE: Wonderfully smooth yet complex, creamy yet fruity with notes of caramel, honey, apricot, and apple, with a silky rich texture.
FINISH: Rich & Oaky. It lingers in themouth with ta rich long finish.
President's Cask Single Malt
This Single Malt Irish whiskey is tripled distilled on a traditional copper pot still from 100% malted Irish grain barley in one Irish distillery location. Aged for at least six years in toasted 250 litre, vintage, Oloroso, ‘HogsheadSherry casks, from Cadiz in the Andalusia region of south-west Spain.
TASTING NOTES:
NOSE: Delightful notes of peaches & cream, vanilla, barley malt softness, with citrus, sweet, honey, caramel, chocolate, orange, lemon, banana, & infused with spices.
TASTE: Wonderfully smooth yet complex, creamy yet fruity with notes of caramel and Manuka honey, apricot, plum, and a silky malt texture.
FINISH: Rich, Spicy, & Oaky. It lingers inthe mouth with a long rich finish.
Heritage Cask Whiskey
Hyde No. 8 Stout Cask Finish is a blend of 75% 4-year-old single grain whiskey matured in first fill flame-charred bourbon casks and 25% 4-year-old single malt whiskey matured in toasted Oloroso sherry casks. This collaboration between The Cotton Ball Brewing Company in Cork and Hibernia Distillers (Hyde) involves vatting the blend and transferring it into a craft Irish stout-infused ex-bourbon oak cask for 5 to 6 months. The stout was previously aged in the cask for 3 months to enhance the flavor profile before the whiskey was laid down.
TASTING NOTES:
NOSE: Deep coffee aroma with caramel overtones.
PALATE: Full-bodied, malty, and creamy flavor imparted by the stout cask.
FINISH: Medium to long creamy finish.
Banyuls Cask Whiskey
Hyde No. 10 is a single cask, single malt finished in a Banyuls Grand Cru red wine cask. Banyuls, a French dessert wine made from 75% Grenache Gris grapes in the Pyrénées-Orientales region, is aged for at least 30 months in white oak barrels before bottling.

NOSE: Balanced with vanilla, toasted oak, marshmallows, and ginger
PALATE: Sweet with vanilla, oak, and cereal
FINISH: Long-lasting
Calvados Garnier Cask
This stellar single malt is distilled from 100% malted barley and matured in flame-charred, first-fill, ex-bourbon white oak casks. It is finished in Calvados Garnier casks from Normandy, France, imparting creamy peach, pear, watermelon, and vanilla flavors, with apricot, baking spices, sweet pastries, floral notes, and a long malty finish.
TASTING NOTES:
AROMAS: Fresh citrus with apples, pears, and a hint of almond
FLAVOR: Creamy peach, pear, watermelon, and vanilla with apricot, baking spices, sweet pastries, and floral notes
FINISH: Long, smooth, and buttery with undertones of malt, toffee, and vanilla
